- 8 oz Fettuccine Pasta
- 1 lb Boneless, Skinless Chicken Breast
- 2 tbsp Cajun Seasoning
- 3 tbsp Unsalted Butter
- 4 cloves Minced Garlic
- 1 cup Heavy Cream
- 1 cup Mozzarella Cheese, shredded
- 1/2 cup Parmesan Cheese, grated
- Salt & Pepper, to taste
- Chopped Parsley, for garnish
Instructions
- In a large pot, bring salted water to a boil. Add fettuccine and cook until al dente, about 8-10 minutes. Save about 1 cup of pasta water before draining.
- While the pasta cooks, heat 1 tablespoon of butter in a large skillet. Season chicken with Cajun seasoning and cook for about 6-7 minutes per side until cooked through. Remove and let rest before slicing.
- In the same skillet, melt the remaining butter and add minced garlic. Sauté for about 1 minute until fragrant. Pour in the heavy cream, stirring gently.
- Reduce heat to low, mix in mozzarella and Parmesan until melted and creamy.
- Add the drained fettuccine to the skillet and toss until combined. Add pasta water as needed to achieve the desired consistency.
- Slice the cooked chicken and place it on top of the pasta. Season further with Cajun seasoning, salt, and pepper to taste. Garnish with parsley before serving.
Notes
Ensure butter is at room temperature before starting. Can customize with vegetables or different proteins.
