- 8 oz pasta (like penne or fettuccine)
- 1 medium butternut squash, peeled and cubed
- 1 lb sausage, crumbled (Italian or your choice)
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
- Crumble the sausage into the skillet and cook until browned, about 5-7 minutes.
- Add the cubed butternut squash and cook for 10-12 minutes until tender.
- Pour in the heavy cream and bring to a gentle simmer. Let cook for 2-3 minutes until slightly thickened.
- Add the cooked pasta and fresh spinach, tossing to coat in the sauce. Use reserved pasta water if sauce is too thick.
- Mix in grated Parmesan cheese until melted. Season with salt and pepper to taste.
- Serve immediately, garnished with extra Parmesan if desired.
Notes
Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of milk or cream.
