Description

A creamy and delicious pasta dish featuring roasted butternut squash, savory sausage, and fresh spinach, perfect for cozy evenings.


Ingredients

  • 8 oz pasta (like penne or fettuccine)
  • 1 medium butternut squash, peeled and cubed
  • 1 lb sausage, crumbled (Italian or your choice)
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside, reserving a bit of the pasta water.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  3. Crumble the sausage into the skillet and cook until browned, about 5-7 minutes.
  4. Add the cubed butternut squash and cook for 10-12 minutes until tender.
  5. Pour in the heavy cream and bring to a gentle simmer. Let cook for 2-3 minutes until slightly thickened.
  6. Add the cooked pasta and fresh spinach, tossing to coat in the sauce. Use reserved pasta water if sauce is too thick.
  7. Mix in grated Parmesan cheese until melted. Season with salt and pepper to taste.
  8. Serve immediately, garnished with extra Parmesan if desired.

Notes

Store leftovers in an airtight container for up to 3 days. Reheat gently with a splash of milk or cream.
