- 8 oz fettuccine or tagliatelle
- 4 slices thick-cut bacon, chopped
- 8 oz baby bella or cremini mushrooms, sliced
- 3 cloves garlic, minced
- 1/2 cup white wine
- 1 cup heavy cream
- 1 tsp dried thyme or oregano
- Salt and pepper, to taste
- Freshly grated Parmesan cheese, for serving
Instructions
- Cook the pasta in a large pot of salted water according to package instructions until al dente, about 8-10 minutes. Drain and set aside, reserving some pasta water.
- In a large skillet over medium heat, cook the chopped bacon for about 5-7 minutes until crispy and golden brown.
- Add the sliced mushrooms to the skillet and cook for about 4-5 minutes until tender and slightly browned.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Pour in the white wine and simmer for about 2-3 minutes until the alcohol cooks off.
- Lower the heat and add the heavy cream and dried herbs, stirring for about 2-3 minutes until well combined.
- Season with salt and pepper to taste, adding reserved pasta water as needed for desired consistency.
- Toss the cooked pasta with the creamy sauce until fully coated.
- Serve with freshly grated Parmesan cheese on top.
Notes
Reserve a bit of pasta water to adjust the sauce consistency if it becomes too thick.
