- 12 ounces rotini pasta
- 1 tablespoon extra virgin olive oil
- 1 ring (13 ounces) Andouille sausage, sliced diagonally into 1/4-inch pieces
- 2 tablespoons unsalted butter
- 1 small yellow onion, finely diced (about 1/4 cup)
- 1 teaspoon garlic, minced
- 1/4 cup (about 4 whole) sun-dried tomatoes, chopped and soaked in hot water, drained
- 2 tablespoons tomato paste
- 1 teaspoon Italian seasoning
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 1 1/2 cups heavy whipping cream
- 2 cups fresh spinach
- 1/4 cup parmesan cheese, finely grated
Instructions
- Bring a large pot of salted water to a boil. Add the rotini pasta and cook it al dente according to package directions. Reserve one cup of pasta water and then drain the excess. Set both the drained pasta and reserved water aside.
- In a large skillet over medium heat, add the olive oil. Once the oil is hot, add the Andouille sausage. Cook for 3-5 minutes on each side, until nice and brown. Transfer it to a plate and tent with foil to keep warm.
- In the same skillet, add the butter. Allow it to melt, then add the onions. Sauté for about 3-5 minutes, until softened and translucent.
- Stir in the minced garlic and chopped sun-dried tomatoes, cooking for an additional minute until fragrant.
- Add the tomato paste, Italian seasoning, salt, and pepper. Stir until well combined.
- Pour in the heavy whipping cream and stir until the mixture is well blended.
- Toss in the fresh spinach, stirring just until it wilts, about 1-2 minutes.
- Return the browned Andouille sausage to the skillet and add the drained pasta. Stir everything together, coating the pasta evenly in the creamy sauce. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
- Remove the skillet from heat. Stir in the grated parmesan cheese until melted and the sauce is extra creamy.
- Serve warm and enjoy!
Notes
Leftovers can be stored in the fridge in an airtight container for up to 3 days. You can prepare the sausage and sauce a day in advance.
