Description

A decadent twist on classic French toast, stuffed with creamy filling and fresh strawberries, perfect for brunch.


Ingredients

  • 2 large eggs
  • 1/4 cup milk (whole or plant-based)
  • 4 tablespoons whole grain bread crumbs
  • 1 tablespoon sugar
  • 1 teaspoon ground cinnamon
  • 4 tablespoons low-fat cream cheese, room temperature
  • 1 tablespoon honey
  • 4 slices whole wheat bread
  • 8 strawberries, hulled and thinly sliced
  • 3 tablespoons butter
  • Powdered sugar for garnish
  • Whipped cream for garnish (optional)
  • Maple syrup for serving

Instructions

  1. In a medium bowl, whisk together the eggs and milk until combined. Optionally, add a dash of vanilla extract.
  2. Mix bread crumbs, sugar, and cinnamon in another bowl. Pour into a shallow dish.
  3. In a separate bowl, combine cream cheese and honey until smooth.
  4. Spread cream cheese mixture on two slices of bread, top with strawberries, and close with remaining slices.
  5. Repeat with remaining ingredients.
  6. Dip stuffed sandwiches into the egg mixture, then coat with bread crumb mixture.
  7. Heat butter in a skillet over medium-high heat, fry both sides of the sandwiches until golden brown.
  8. Serve hot with powdered sugar, whipped cream, and maple syrup.

Notes

Use day-old bread for better texture; reheat leftovers in the oven for crispiness.
