- 2 large eggs
- 1/4 cup milk (whole or plant-based)
- 4 tablespoons whole grain bread crumbs
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
- 4 tablespoons low-fat cream cheese, room temperature
- 1 tablespoon honey
- 4 slices whole wheat bread
- 8 strawberries, hulled and thinly sliced
- 3 tablespoons butter
- Powdered sugar for garnish
- Whipped cream for garnish (optional)
- Maple syrup for serving
Instructions
- In a medium bowl, whisk together the eggs and milk until combined. Optionally, add a dash of vanilla extract.
- Mix bread crumbs, sugar, and cinnamon in another bowl. Pour into a shallow dish.
- In a separate bowl, combine cream cheese and honey until smooth.
- Spread cream cheese mixture on two slices of bread, top with strawberries, and close with remaining slices.
- Repeat with remaining ingredients.
- Dip stuffed sandwiches into the egg mixture, then coat with bread crumb mixture.
- Heat butter in a skillet over medium-high heat, fry both sides of the sandwiches until golden brown.
- Serve hot with powdered sugar, whipped cream, and maple syrup.
Notes
Use day-old bread for better texture; reheat leftovers in the oven for crispiness.
