Ingredients

  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar, sifted
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup fruit jam (raspberry, strawberry, or your choice)
  • Powdered sugar for dusting

Instructions

  1. In a large bowl, cream together the softened cream cheese and butter until smooth and fluffy—about 3-4 minutes.
  2. Gradually add the powdered sugar and vanilla extract, mixing until well combined (1-2 minutes).
  3. Stir in the flour slowly until a soft dough forms (2-3 minutes).
  4. Divide the dough in half and roll each half between two sheets of parchment paper into rectangles about 1/4 inch thick.
  5. Spread a layer of fruit jam evenly over each rectangle, leaving a small border around the edges.
  6. Roll the dough into a log shape, starting from the long side.
  7. Wrap the logs in plastic wrap and refrigerate for at least 120 minutes.
  8. Preheat the oven to 350°F (175°C).
  9. Slice the logs into 1/4 inch thick cookies and place on a baking sheet lined with parchment paper.
  10. Bake for 12-15 minutes, or until the edges are lightly golden.
  11. Let cool slightly before dusting with powdered sugar.
