- 1/2 cup unsalted butter, softened
- 1 cup powdered sugar, sifted
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1/2 cup fruit jam (raspberry, strawberry, or your choice)
- Powdered sugar for dusting
Instructions
- In a large bowl, cream together the softened cream cheese and butter until smooth and fluffy—about 3-4 minutes.
- Gradually add the powdered sugar and vanilla extract, mixing until well combined (1-2 minutes).
- Stir in the flour slowly until a soft dough forms (2-3 minutes).
- Divide the dough in half and roll each half between two sheets of parchment paper into rectangles about 1/4 inch thick.
- Spread a layer of fruit jam evenly over each rectangle, leaving a small border around the edges.
- Roll the dough into a log shape, starting from the long side.
- Wrap the logs in plastic wrap and refrigerate for at least 120 minutes.
- Preheat the oven to 350°F (175°C).
- Slice the logs into 1/4 inch thick cookies and place on a baking sheet lined with parchment paper.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let cool slightly before dusting with powdered sugar.
