Description

A delightful quick bread combining rich cream cheese and tart cranberries, perfect for holiday gatherings and cozy brunches.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 8 oz cream cheese, softened
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen cranberries

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a large bowl, beat the softened butter and cream cheese until smooth and fluffy, about 3-4 minutes.
  4. Add the sugar, then incorporate the eggs and vanilla extract until mixed well.
  5. Gradually add dry ingredients to the wet mixture, stirring gently.
  6. Fold in cranberries carefully.
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes or until a toothpick comes out clean.
  9. Cool for 10 minutes in the pan before transferring to a wire rack. Slice and enjoy.

Notes

Best served warm with butter. Can be stored in an airtight container for up to 3 days.
