- 8 oz cream cheese, softened
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen cranberries
Instructions
- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
- In a large bowl, beat the softened butter and cream cheese until smooth and fluffy, about 3-4 minutes.
- Add the sugar, then incorporate the eggs and vanilla extract until mixed well.
- Gradually add dry ingredients to the wet mixture, stirring gently.
- Fold in cranberries carefully.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 55-65 minutes or until a toothpick comes out clean.
- Cool for 10 minutes in the pan before transferring to a wire rack. Slice and enjoy.
Notes
Best served warm with butter. Can be stored in an airtight container for up to 3 days.
