Description

Ingredients

  • 2 cups all-purpose flour
  • 1 cup fresh cranberries (halved)
  • 1 cup chopped walnuts
  • 3/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 2 large eggs (room temperature)
  • 1/4 cup melted butter

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or line it with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
  3. In another bowl, mix milk, eggs, and melted butter until blended.
  4. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  5. Fold in the cranberries and walnuts until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth the top if needed.
  7. Bake for 60-70 minutes or until a toothpick comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

For a beautiful top, sprinkle a bit of raw sugar before baking. This bread keeps well at room temperature for up to 3 days.
