- 1 cup fresh cranberries (halved)
- 1 cup chopped walnuts
- 3/4 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 2 large eggs (room temperature)
- 1/4 cup melted butter
Instructions
- Preheat your oven to 350°F (175°C). Grease a loaf pan with butter or line it with parchment paper.
- In a large bowl, whisk together flour, sugar, baking powder, and salt until combined.
- In another bowl, mix milk, eggs, and melted butter until blended.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Fold in the cranberries and walnuts until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top if needed.
- Bake for 60-70 minutes or until a toothpick comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For a beautiful top, sprinkle a bit of raw sugar before baking. This bread keeps well at room temperature for up to 3 days.
