Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat room temperature butter until smooth and creamy. Gradually add powdered sugar until fluffy.
- Mix in the zest of one large orange and vanilla extract until just combined.
- In another bowl, whisk together flour and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in the dried cranberries gently.
- Form tablespoon-sized balls of dough and place them on the prepared baking sheet, flattening slightly.
- Bake for about 12-15 minutes, until edges are lightly golden.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
For a richer flavor, use European-style butter. If dough is too soft, chill for 30 minutes.
