Ingredients

  • 1 cup dried cranberries
  • Zest of 1 large orange

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat room temperature butter until smooth and creamy. Gradually add powdered sugar until fluffy.
  3. Mix in the zest of one large orange and vanilla extract until just combined.
  4. In another bowl, whisk together flour and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in the dried cranberries gently.
  6. Form tablespoon-sized balls of dough and place them on the prepared baking sheet, flattening slightly.
  7. Bake for about 12-15 minutes, until edges are lightly golden.
  8. Let cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a richer flavor, use European-style butter. If dough is too soft, chill for 30 minutes.
