- 1 cup fresh cranberries
- 1 cup orange juice
- 1/2 cup sugar
- 1/2 cup butter, softened
- 1/2 cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- Zest of one orange
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a medium bowl, combine fresh cranberries with 1/4 cup sugar and set aside.
- In a large bowl, cream together softened butter, brown sugar, and remaining granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in vanilla and orange juice.
- In another bowl, whisk together flour, baking powder, salt, and orange zest. Gradually add this dry mixture to the wet ingredients until just combined.
- Fold in the sugared cranberries.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 30-35 minutes, until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 15 minutes before serving.
