Description

Ingredients

  • 2 cups rolled oats
  • 2 cups milk (or dairy-free alternative)
  • 1 cup fresh or frozen cranberries
  • 1 medium orange, zested and juiced
  • 1/4 cup maple syrup or honey
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9×9 inch baking dish with butter or cooking spray.
  3. In a large mixing bowl, combine the rolled oats, milk, cranberries, orange zest and juice, maple syrup, baking powder, vanilla extract, cinnamon, and salt. Stir until well mixed.
  4. Transfer the mixture into the prepared baking dish and smooth it out with a spatula.
  5. Bake for 25-30 minutes, or until set and lightly golden on top.
  6. Let cool for a few minutes before serving warm.
