- 2 cups rolled oats
- 2 cups milk (or dairy-free alternative)
- 1 cup fresh or frozen cranberries
- 1 medium orange, zested and juiced
- 1/4 cup maple syrup or honey
- 2 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×9 inch baking dish with butter or cooking spray.
- In a large mixing bowl, combine the rolled oats, milk, cranberries, orange zest and juice, maple syrup, baking powder, vanilla extract, cinnamon, and salt. Stir until well mixed.
- Transfer the mixture into the prepared baking dish and smooth it out with a spatula.
- Bake for 25-30 minutes, or until set and lightly golden on top.
- Let cool for a few minutes before serving warm.
