Ingredients

  • 1/2 cup dried cranberries
  • 1/4 cup fresh ginger, finely chopped
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a 9×9 inch baking pan with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy (about 2-3 minutes).
  3. Beat in the eggs one at a time, followed by the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients, then fold in the white chocolate chips, dried cranberries, and chopped ginger.
  6. Spread the batter evenly in the prepared pan.
  7. Bake for 25-30 minutes, or until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 10 minutes, then lift out and cool completely on a wire rack before cutting into squares.
