Description

Chewy and crispy cookies packed with oats, chocolate, and nuts, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups old-fashioned oats
  • 1 cup semi-sweet chocolate chips
  • 1 cup shredded coconut
  • 1 cup chopped pecans, toasted

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually blend the dry ingredients into the wet mixture.
  6. Mix in the oats, chocolate chips, shredded coconut, and pecans until well combined.
  7. Drop by rounded tablespoons onto ungreased baking sheets, leaving space between each cookie.
  8. Bake for 10-12 minutes, or until the edges are golden.
  9. Allow to cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Notes

For room temperature ingredients, let the butter and eggs sit out before starting. Store cookies in an airtight container.
