- 2 large chicken breasts (boneless, skinless)
- 8 oz linguine pasta
- ½ cup unsalted butter
- 4 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- ½ teaspoon crushed red pepper flakes (optional)
- Salt and pepper, to taste
- 1 cup chicken broth
- 1 tablespoon lemon juice
- Freshly grated Parmesan cheese
Instructions
- Pat chicken breasts dry with a paper towel and season with salt, pepper, smoked paprika, onion powder, and red pepper flakes. Let sit.
- Melt 2 tablespoons of butter in a skillet over medium heat and cook chicken for 6–7 minutes on each side until golden brown and cooked through. Remove and set aside.
- Cook linguine in a pot of boiling salted water until al dente, about 8–10 minutes. Drain and reserve 1 cup of pasta water.
- In the same skillet, melt remaining butter. Sauté garlic, parsley, and thyme for 1–2 minutes. Add chicken broth and lemon juice, simmer for 2–3 minutes.
- Slice the cooked chicken into strips.
- Add linguine to the skillet with the sauce, tossing to combine. Use reserved pasta water to adjust consistency, then fold in sliced chicken.
- Plate the pasta, garnishing with Parmesan and extra herbs if desired. Serve warm.
