- 3 whole heads of garlic (roasted)
- 1 tablespoon olive oil
- 1 tablespoon butter (optional)
- 2 medium yellow onions, diced
- 4 cups vegetable broth (or chicken broth)
- 1 cup whole milk or heavy cream (or plant-based milk)
- 1 bay leaf
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped, for garnish
- Crusty bread or toasted baguette slices, for serving
Instructions
- Preheat your oven to 375°F (190°C). Cut the tops off the garlic heads, drizzle with olive oil, wrap them in foil, and roast for 35-40 minutes until soft and fragrant.
- In a large pot, heat the olive oil and butter over medium heat. Add the diced onions and cook until golden and caramelized, about 15-20 minutes.
- Stir in the roasted garlic cloves, thyme, bay leaf, salt, and pepper. Add the broth and bring to a gentle boil, then simmer for 15-20 minutes.
- Remove the bay leaf, and use an immersion blender to purée the soup to your desired consistency.
- Stir in the milk or cream and warm gently, adjusting seasoning as needed.
- Garnish with fresh parsley and serve hot alongside crusty bread.
Notes
For a richer flavor, consider adding a splash of white wine after sautéing the onions. Store leftovers in an airtight container for up to 3 days.
