Description

A warm and comforting garlic soup with roasted garlic, caramelized onions, and fresh herbs—a perfect dish for cold evenings and family gatherings.


Ingredients

  • 3 whole heads of garlic (roasted)
  • 1 tablespoon olive oil
  • 1 tablespoon butter (optional)
  • 2 medium yellow onions, diced
  • 4 cups vegetable broth (or chicken broth)
  • 1 cup whole milk or heavy cream (or plant-based milk)
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves (or ½ teaspoon dried)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish
  • Crusty bread or toasted baguette slices, for serving

Instructions

  1. Preheat your oven to 375°F (190°C). Cut the tops off the garlic heads, drizzle with olive oil, wrap them in foil, and roast for 35-40 minutes until soft and fragrant.
  2. In a large pot, heat the olive oil and butter over medium heat. Add the diced onions and cook until golden and caramelized, about 15-20 minutes.
  3. Stir in the roasted garlic cloves, thyme, bay leaf, salt, and pepper. Add the broth and bring to a gentle boil, then simmer for 15-20 minutes.
  4. Remove the bay leaf, and use an immersion blender to purée the soup to your desired consistency.
  5. Stir in the milk or cream and warm gently, adjusting seasoning as needed.
  6. Garnish with fresh parsley and serve hot alongside crusty bread.

Notes

For a richer flavor, consider adding a splash of white wine after sautéing the onions. Store leftovers in an airtight container for up to 3 days.
