- ¾ lb bacon (about 12 slices)
- 4 large eggs
- 1 cup diced red potatoes
- ½ cup chopped green peppers
- ¼ cup shredded cheddar cheese
- Fresh parsley
- Salt and pepper to taste
Instructions
- Cut bacon into 1-inch pieces and cook in a large skillet over medium heat for 5-7 minutes until crisp.
- Drain half of the bacon fat but save it for flavor.
- Add diced red potatoes and chopped green peppers to the skillet and cook for 8-10 minutes until golden brown.
- Transfer the bacon and vegetable mixture to a bowl and set aside.
- In the same skillet, crack 4 eggs and let cook for about 1 minute until egg whites are set.
- Return bacon, potato, and pepper mixture to the skillet around the eggs and sprinkle with cheese. Cook for another minute until cheese is melted.
- Remove from heat, season with salt and pepper, and garnish with parsley. Serve directly from the skillet.
Notes
For added creaminess, you can add cream or milk to the eggs. Store leftovers in the fridge for up to 3 days.
