- 1 cup cottage cheese
- 2 cups fresh spinach
- 6 large eggs
- 1 cup shredded cheese (cheddar/mozzarella blend)
- 1/2 cup milk
- 1/4 cup onion, finely chopped
- Salt and pepper to taste
- Optional: garlic powder, nutmeg, red pepper flakes
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, combine cottage cheese, spinach, eggs, shredded cheese, milk, onion, salt, and pepper.
- Mix until well combined.
- Pour into greased pie dish.
- Bake 30-35 minutes until set and golden.
- Cool slightly before serving.
Notes
- Drain frozen spinach thoroughly if using
- Can be made ahead and refrigerated before baking
- Leftovers keep for 3 days in refrigerator
