Ingredients

- 1 cup all-purpose flour, plus more for dusting
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup cottage cheese, blended
- Olive oil (for drizzling on top)
- Optional toppings: shredded mozzarella, fresh basil, pepperoni, roasted veggies, etc.
Instructions
- In a bowl, add the flour, baking powder, and salt. Mix thoroughly to combine the dry ingredients.
- Add the cottage cheese to a food processor and blend until smooth.
- Combine the blended cottage cheese with the dry ingredients and mix until a smooth dough forms.
- If the dough feels too sticky, dust with more flour as needed.
- Dust flour on the surface and roll out the dough to your desired thickness.
- Place the rolled-out dough on a baking sheet lined with parchment paper.
- Add olive oil on top and pre-bake for 10 minutes at 450°F (230°C).
- Remove from the oven, add desired toppings, and return to bake until the cheese melts—about 5 minutes. Broil for 1-2 minutes for a golden crust if desired.
