- 2 tablespoons sugar (optional)
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup cottage cheese
- 1/2 cup Greek yogurt
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 tablespoons milk
- 1 tablespoon melted butter or oil
- Optional toppings: Fresh strawberries, blueberries, maple syrup, honey, powdered sugar, whipped cream
Instructions
- Preheat your skillet over medium heat and lightly grease it with butter or oil.
- In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, mix the wet ingredients: cottage cheese, Greek yogurt, eggs, vanilla extract, and melted butter.
- Combine the wet mixture with the dry ingredients, stirring until just combined, and add milk if needed for desired consistency.
- Scoop about 1 tablespoon of batter onto the skillet for each pancake bite.
- Cook for 2-3 minutes until bubbles appear, then flip and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, greasing the skillet as needed.
- Serve warm with desired toppings.
Notes
