Description

A delightful twist on traditional pancakes, these Cottage Cheese Pancake Bites are fluffy, protein-rich, and perfect for any breakfast occasion.


Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar (optional)
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup cottage cheese
  • 1/2 cup Greek yogurt
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk
  • 1 tablespoon melted butter or oil
  • Optional toppings: Fresh strawberries, blueberries, maple syrup, honey, powdered sugar, whipped cream

Instructions

  1. Preheat your skillet over medium heat and lightly grease it with butter or oil.
  2. In a medium bowl, whisk together the dry ingredients: flour, sugar, baking powder, baking soda, and salt.
  3. In a separate bowl, mix the wet ingredients: cottage cheese, Greek yogurt, eggs, vanilla extract, and melted butter.
  4. Combine the wet mixture with the dry ingredients, stirring until just combined, and add milk if needed for desired consistency.
  5. Scoop about 1 tablespoon of batter onto the skillet for each pancake bite.
  6. Cook for 2-3 minutes until bubbles appear, then flip and cook for another 2-3 minutes until golden brown.
  7. Repeat with the remaining batter, greasing the skillet as needed.
  8. Serve warm with desired toppings.
