- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 cup granulated white sugar
- 1/4 cup unsalted butter, softened
- 1 large egg
- 3/4 cup milk
- 1 cup cottage cheese
Instructions
- Preheat the oven to 375°F (190°C) and prepare a muffin pan.
- In a large bowl, whisk together the flours, baking powder, and baking soda.
- Cream the butter and sugar in another bowl until pale and fluffy.
- Add the egg and milk to the butter mixture, mixing until combined.
- Fold in the cottage cheese gently.
- Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
- Fill the muffin cups about two-thirds full.
- Bake for 18-20 minutes or until golden and a toothpick comes out clean.
