Description

Fluffy and moist Cottage Cheese Muffins filled with cheesy goodness, perfect for breakfast or as a snack.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 cup granulated white sugar
  • 1/4 cup unsalted butter, softened
  • 1 large egg
  • 3/4 cup milk
  • 1 cup cottage cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and prepare a muffin pan.
  2. In a large bowl, whisk together the flours, baking powder, and baking soda.
  3. Cream the butter and sugar in another bowl until pale and fluffy.
  4. Add the egg and milk to the butter mixture, mixing until combined.
  5. Fold in the cottage cheese gently.
  6. Add the dry ingredients to the wet ingredients gradually, mixing until just combined.
  7. Fill the muffin cups about two-thirds full.
  8. Bake for 18-20 minutes or until golden and a toothpick comes out clean.
