Ingredients

  • 3 large eggs, separated
  • ½ cup cottage cheese (preferably full-fat)
  • ¼ tsp cream of tartar
  • 1 tbsp almond flour (optional)
  • 1 tbsp coconut flour (optional)
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tbsp olive oil or melted butter
  • Toppings: sesame seeds, chia seeds, or poppy seeds

Instructions

  1. Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper.
  2. Separate the egg whites and yolks into different bowls.
  3. Add cream of tartar to the egg whites and beat until stiff peaks form.
  4. In the yolk bowl, mix in cottage cheese, almond flour, coconut flour, baking powder, salt, and olive oil until smooth.
  5. Gently fold the egg whites into the cottage cheese mixture.
  6. Drop dollops of the mixture onto the prepared baking sheet, shaping them as desired.
  7. Sprinkle with toppings and bake for 25-30 minutes until golden.
  8. Cool on a wire rack and enjoy as desired.
