Description

A healthier twist on the classic chicken parmesan, featuring creamy cottage cheese, crispy chicken, and tangy marinara.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup marinara sauce
  • 1 cup cottage cheese
  • 1 cup breadcrumbs
  • 1 teaspoon Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • Olive oil spray
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Season chicken with salt, pepper, and Italian seasoning, then sear in a hot skillet with olive oil for 3-4 minutes on each side.
  3. Transfer chicken to a baking dish and pour marinara sauce on top.
  4. Combine cottage cheese and grated Parmesan in a bowl, then spread over the marinara sauce.
  5. Sprinkle breadcrumbs on top and lightly spray with olive oil.
  6. Bake for about 15 minutes until breadcrumbs are golden and cheese is melted.
  7. Let cool for a few minutes and serve warm.
