Ingredients
Scale
- 12 ounces fresh or frozen uncooked cauliflower rice
- 1 cup cottage cheese
- ½ teaspoon kosher salt
- ¼ teaspoon dried oregano
- ¼ teaspoon garlic powder
- Nonstick cooking spray
Instructions
- Preheat the Oven: Turn your oven to 425°F (or 450°F for non-convection ovens) and line a baking sheet with parchment paper.
- Cook the Cauliflower Rice: In a skillet over medium-high heat, cook the cauliflower rice for 3-5 minutes until tender.
- Remove Moisture: Spread the cooked cauliflower on paper towels to absorb excess moisture and let it cool.
- Blend the Cottage Cheese: Puree cottage cheese in a food processor until smooth.
- Mix Ingredients: Combine the cooled cauliflower, blended cottage cheese, salt, oregano, and garlic powder in a bowl.
- Form the Tots: Scoop the mixture into small shapes and place on the baking sheet.
- Bake: Spray tots with cooking spray and bake for 15-20 minutes until golden brown, flipping halfway.
- Serve: Allow to cool slightly before serving with your favorite dipping sauces.
Notes
To get the crispiest tots, ensure to drain excess moisture from the cauliflower. Store leftovers in an airtight container for up to 3 days.
