A lighter and healthier version of bread packed with protein, fluffy cottage cheese and juicy blueberries.
Ingredients

- 1 cup cottage cheese
- 3 large eggs
- 1/2 teaspoon baking powder
- 1/2 cup blueberries
- Sweetener to taste
- Pinch of salt
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Blend the cottage cheese in a mixing bowl until smooth.
- Add the eggs, baking powder, and salt to the cottage cheese and mix until well combined.
- Gently fold in the blueberries (and sweetener if using) with a spatula.
- Spoon the mixture onto the prepared baking sheet, forming rounds.
- Bake for 20-25 minutes or until golden and set.
- Let cool slightly before serving.
Notes
Use room temperature eggs for a fluffier result; they mix more evenly. Store leftovers in an airtight container for up to two days.
