Description

A lighter and healthier version of bread packed with protein, fluffy cottage cheese and juicy blueberries.


Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/2 teaspoon baking powder
  • 1/2 cup blueberries
  • Sweetener to taste
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Blend the cottage cheese in a mixing bowl until smooth.
  3. Add the eggs, baking powder, and salt to the cottage cheese and mix until well combined.
  4. Gently fold in the blueberries (and sweetener if using) with a spatula.
  5. Spoon the mixture onto the prepared baking sheet, forming rounds.
  6. Bake for 20-25 minutes or until golden and set.
  7. Let cool slightly before serving.

Notes

Use room temperature eggs for a fluffier result; they mix more evenly. Store leftovers in an airtight container for up to two days.
