Soft, chewy bagels infused with creamy cottage cheese for a healthy twist on a classic favorite.


Ingredients

  • 1 cup all-purpose flour (plus more for dusting)
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup cottage cheese (blended)
  • 1/2 egg, beaten (or flaxseed egg for vegan version)
  • Optional toppings: sesame seeds, everything but bagel seasoning

Instructions

  1. In a large bowl, add 1 cup of flour, 2 teaspoons of baking powder, and 1 teaspoon of salt. Whisk well to combine.
  2. In a food processor, blend 1 cup of cottage cheese until smooth and creamy.
  3. Pour the blended cottage cheese into the bowl of dry ingredients. Mix gently until a smooth dough forms.
  4. Divide the dough into 4 equal pieces. Roll each piece into a ball and poke a hole in the center, stretching to form a bagel shape.
  5. Brush the tops and sides with the beaten egg and sprinkle with optional toppings.
  6. For air frying, preheat to 300°F and cook for about 13 minutes. For the oven, preheat to 375°F and bake for about 25 minutes until golden brown.
