Description

Ingredients

  • 1 pound beef sirloin or tenderloin, sliced
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced
  • 2 tablespoons flour
  • 1 cup beef broth
  • 1 cup sour cream
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 2 pounds potatoes, peeled and diced
  • 4 tablespoons butter
  • 1/2 cup milk

Instructions

  1. Brown beef in skillet for 5-7 minutes, then remove and set aside
  2. Sauté onion and garlic for 3-4 minutes until softened
  3. Add mushrooms and cook 5-7 minutes until browned
  4. Sprinkle flour over mixture and stir to incorporate
  5. Gradually add beef broth, stirring until sauce thickens (3-5 minutes)
  6. Reduce heat and stir in sour cream and Worcestershire sauce
  7. Return beef to skillet and simmer for 5 minutes
  8. Meanwhile, boil potatoes for 15-20 minutes until tender
  9. Drain potatoes and mash with butter and milk until smooth
  10. Serve beef stroganoff over mashed potatoes

Notes

  • Use room temperature butter for easier blending
  • Don’t boil the sauce after adding sour cream to prevent curdling
  • For richer flavor, deglaze pan with red wine after browning beef
