- 2 cloves garlic, minced
- 8 ounces mushrooms, sliced
- 2 tablespoons flour
- 1 cup beef broth
- 1 cup sour cream
- 2 tablespoons Worcestershire sauce
- Salt and pepper to taste
- 2 pounds potatoes, peeled and diced
- 4 tablespoons butter
- 1/2 cup milk
Instructions
- Brown beef in skillet for 5-7 minutes, then remove and set aside
- Sauté onion and garlic for 3-4 minutes until softened
- Add mushrooms and cook 5-7 minutes until browned
- Sprinkle flour over mixture and stir to incorporate
- Gradually add beef broth, stirring until sauce thickens (3-5 minutes)
- Reduce heat and stir in sour cream and Worcestershire sauce
- Return beef to skillet and simmer for 5 minutes
- Meanwhile, boil potatoes for 15-20 minutes until tender
- Drain potatoes and mash with butter and milk until smooth
- Serve beef stroganoff over mashed potatoes
Notes
- Use room temperature butter for easier blending
- Don’t boil the sauce after adding sour cream to prevent curdling
- For richer flavor, deglaze pan with red wine after browning beef
