Description

A delightful twist on traditional coleslaw with fresh apples and a creamy yogurt dressing, perfect for any occasion.


Ingredients

  • 9 cups cabbage, thinly shredded
  • 14 oz broccoli slaw mix
  • 1/2 cup carrots, grated
  • 1/2 cup scallions, finely chopped
  • 1 apple, cored and cut into 1/4 inch matchsticks
  • 1.25 cups yogurt
  • 0.75 cup mayonnaise
  • 2 tbsp vinegar
  • 1 tbsp lemon juice
  • 1 tsp garlic, minced
  • Salt, pepper, and a pinch of white pepper for seasoning

Instructions

  1. In a large bowl, combine the shredded cabbage, broccoli slaw mix, grated carrots, and finely chopped scallions. Toss gently to distribute evenly.
  2. In a separate bowl, whisk together the yogurt, mayonnaise, vinegar, lemon juice, minced garlic, salt, and white pepper until smooth.
  3. Core the apple and cut it into thin matchsticks just before serving.
  4. Add the fresh apple and dressing to the vegetable mixture. Toss until well coated.

Notes

For a dairy-free option, swap yogurt with a plant-based yogurt. Store in the fridge for up to 2-3 days, but for best texture, enjoy within 24 hours.
