Description

Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1 tablespoon ground cardamom
  • 1 tablespoon espresso powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 cup coarse sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy, about 2–3 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the all-purpose flour, ground cardamom, espresso powder, baking soda, and salt.
  5. Add the dry ingredients to the wet mixture, mixing until just combined.
  6. Scoop tablespoon-sized portions of dough, roll them into balls, and then roll them in the coarse sugar until well coated.
  7. Place the dough balls onto the prepared baking sheet about 2 inches apart.
  8. Bake for 10–12 minutes, or until the edges are golden and the centers are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

For best results, use room temperature ingredients. Store cookies in an airtight container for up to 1 week.
