Description

A vibrant dish that marries the delicate flavor of cod with a rich, velvety roasted red pepper sauce, perfect for weeknight dinners or special occasions.

Ingredients

Scale
  • 4 pieces cod fillets
  • 2 cups roasted red peppers
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • To taste salt and black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the sauce: In a medium saucepan over medium heat, add olive oil and minced garlic. Sauté for 1-2 minutes until fragrant.
  3. Add the roasted red peppers and simmer for about 5 minutes. Season with salt and black pepper to taste.
  4. Prepare the cod: Lightly grease a baking dish and place cod fillets inside, seasoning with salt and black pepper.
  5. Top the cod with the roasted red pepper sauce, ensuring they’re well coated.
  6. Bake in the preheated oven for 15-20 minutes until the fish flakes easily and is opaque.
  7. Garnish with fresh parsley before serving.
  8. Enjoy hot with crusty bread, rice, or quinoa.

Notes

Make sure your cod fillets are at room temperature for even cooking. Leftovers can be stored in the fridge for up to 2 days.
