Description

Delightful cod fish cakes made with flaky cod, panko breadcrumbs, and Old Bay seasoning, served with a homemade dipping sauce.


Ingredients

  • Salt and pepper to taste
  • 1 tbsp olive oil
  • Optional for serving: 1/4 cup low-fat mayonnaise, 1/4 cup plain Greek yogurt, 2-4 tbsp fresh herbs, lemon juice

Instructions

  1. Prep the fish: Use a fork to break apart the cooked cod into bite-sized pieces.
  2. Mix the base: In a large bowl, beat the eggs until light and frothy, then add green onions, parsley, lemon juice, lemon zest, Old Bay seasoning, salt, and pepper, and stir.
  3. Incorporate the fish: Gently fold in the flaked cod and panko breadcrumbs until evenly coated.
  4. Shape the patties: Divide the mixture into patties, about 2 inches in diameter, using roughly 1/8 cup for each.
  5. Cook to perfection: Heat olive oil in a skillet over medium-high heat, then cook patties for about 3 minutes per side or until golden brown.
  6. Optional sauce: Mix mayonnaise, Greek yogurt, fresh herbs, lemon juice, salt, and pepper.
  7. Serve and enjoy: Remove fish cakes from the skillet and serve with dipping sauce or on a bun with lemon.
