- 3/4 cup panko breadcrumbs (ideally whole wheat)
- 2 green onions, diced
- 2 tbsp fresh parsley, chopped
- 2 eggs, beaten
- 1/2 lemon, juice and zest
- 1/2 tbsp Old Bay seasoning (or seafood seasoning)
- Salt and pepper to taste
- 1 tbsp olive oil
- Optional for serving: 1/4 cup low-fat mayonnaise, 1/4 cup plain Greek yogurt, 2-4 tbsp fresh herbs, lemon juice
Instructions
- Prep the fish: Use a fork to break apart the cooked cod into bite-sized pieces.
- Mix the base: In a large bowl, beat the eggs until light and frothy, then add green onions, parsley, lemon juice, lemon zest, Old Bay seasoning, salt, and pepper, and stir.
- Incorporate the fish: Gently fold in the flaked cod and panko breadcrumbs until evenly coated.
- Shape the patties: Divide the mixture into patties, about 2 inches in diameter, using roughly 1/8 cup for each.
- Cook to perfection: Heat olive oil in a skillet over medium-high heat, then cook patties for about 3 minutes per side or until golden brown.
- Optional sauce: Mix mayonnaise, Greek yogurt, fresh herbs, lemon juice, salt, and pepper.
- Serve and enjoy: Remove fish cakes from the skillet and serve with dipping sauce or on a bun with lemon.
Notes
Use room temperature ingredients for even mixing and let the mixture sit for 15-30 minutes before cooking for enhanced flavors.
