Ingredients

- 4 cups UFC coconut water
- 1 Tbsp agar agar powder
- 6 Tbsp sugar (or to taste)
- Fruit of your choice (e.g., mango, pineapple, strawberries, blackberries, blueberries, mandarin slices, kiwi)
- 1.25 inches silicone cube mold
Instructions
- Prepare the fruit: Cut larger fruits into pieces no larger than 3/4 inch.
- Fill the molds with prepared fruit, ensuring even distribution.
- Combine 2 1/2 cups of coconut water and agar agar in a small pot.
- Heat the mixture to a full boil over medium-high heat, stirring frequently.
- Dissolve the sugar into the boiling mixture until fully dissolved.
- Chill the mixture by adding the remaining coconut water.
- Fill the molds with the coconut mixture until just under the rim.
- Let the molds sit until set on top (about 30 minutes) before refrigerating for at least 2 hours.
- Unmold the jelly cubes by gently turning the molds upside down over a plate.
Notes
Store leftovers in an airtight container in the fridge for up to one week. Customize flavors with different fruits or sweeteners as desired.
