Description

Delightful and refreshing coconut water jelly cubes bursting with fruity flavors, perfect for summer gatherings.


Ingredients

Scale
  • 4 cups UFC coconut water
  • 1 Tbsp agar agar powder
  • 6 Tbsp sugar (or to taste)
  • Fruit of your choice (e.g., mango, pineapple, strawberries, blackberries, blueberries, mandarin slices, kiwi)
  • 1.25 inches silicone cube mold

Instructions

  1. Prepare the fruit: Cut larger fruits into pieces no larger than 3/4 inch.
  2. Fill the molds with prepared fruit, ensuring even distribution.
  3. Combine 2 1/2 cups of coconut water and agar agar in a small pot.
  4. Heat the mixture to a full boil over medium-high heat, stirring frequently.
  5. Dissolve the sugar into the boiling mixture until fully dissolved.
  6. Chill the mixture by adding the remaining coconut water.
  7. Fill the molds with the coconut mixture until just under the rim.
  8. Let the molds sit until set on top (about 30 minutes) before refrigerating for at least 2 hours.
  9. Unmold the jelly cubes by gently turning the molds upside down over a plate.

Notes

Store leftovers in an airtight container in the fridge for up to one week. Customize flavors with different fruits or sweeteners as desired.
