- 1 cup cottage cheese
- 1/2 cup shredded coconut
- 1/2 cup crushed pineapple (drained)
- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large mixing bowl, combine cottage cheese, sugar, oil, eggs, and vanilla. Mix until well combined.
- In another bowl, whisk together flour, baking powder, baking soda, salt, shredded coconut, and crushed pineapple.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Spoon the batter into the muffin cups, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted comes out clean.
- Let cool in the tin before transferring to a wire rack. Enjoy warm or at room temperature!
Notes
For extra coconut flavor, use coconut oil instead of vegetable oil. You can customize by adding nuts or chocolate chips if desired.
