Description

Delightful cookies bursting with the tropical flavors of coconut and pineapple, reminiscent of summer luaus.


Ingredients

Scale
  • 2 cups Master Mix
  • 1 cup Sweetened Shredded Coconut
  • 1/4 cup Sugar
  • 1/4 cup Diced Dried Pineapple
  • Optional: Pinch of sea salt

Instructions

  1. Preheat your oven to 350°F.
  2. Line a baking sheet with parchment paper.
  3. In a large bowl, whisk together the master mix, shredded coconut, sugar, and diced pineapple. Optionally, add a pinch of salt.
  4. Carefully stir in 1/4 cup of water until the dough holds together.
  5. Using about 2 tablespoons of dough for each cookie, roll into a ball and place them 2 inches apart on the baking sheet.
  6. Bake for 15-17 minutes or until the edges are lightly golden.
  7. Let them cool completely on the baking sheet.

Notes

Store in an airtight container for up to a week. Freeze for longer storage.
