Description

Delicious gluten-free coconut flour donut holes that are light, fluffy, and perfect for any occasion.


Ingredients

  • 1/4 cup coconut flour
  • 2 large eggs
  • 1/2 cup unsweetened applesauce
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon vanilla extract (optional)
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon cinnamon (for the glaze)

Instructions

  1. Preheat the oven to 160°C (350°F) and grease a mini muffin tray with coconut oil.
  2. Mix the eggs, unsweetened applesauce, honey or maple syrup, and vanilla in a bowl until smooth.
  3. Combine the coconut flour, cinnamon, and baking powder in another bowl.
  4. Slowly mix the dry ingredients into the wet ingredients until smooth.
  5. Carefully fill the muffin tray with batter until 3/4 full.
  6. Bake for about 15 minutes or until golden brown and a toothpick comes out clean.
  7. Mix the coconut sugar and remaining cinnamon in a bowl for the glaze.
  8. Dip each donut hole into the cinnamon-sugar mixture once cooled.

Notes

Ensure all perishables are at room temperature before mixing. Don’t overmix to keep the donut holes light and fluffy.
