Delicious gluten-free coconut flour donut holes that are light, fluffy, and perfect for any occasion.
Ingredients

- 1/4 cup coconut flour
- 2 large eggs
- 1/2 cup unsweetened applesauce
- 2 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract (optional)
- 1/2 teaspoon cinnamon
- 1 teaspoon baking powder
- 1 tablespoon coconut sugar
- 1/2 teaspoon cinnamon (for the glaze)
Instructions
- Preheat the oven to 160°C (350°F) and grease a mini muffin tray with coconut oil.
- Mix the eggs, unsweetened applesauce, honey or maple syrup, and vanilla in a bowl until smooth.
- Combine the coconut flour, cinnamon, and baking powder in another bowl.
- Slowly mix the dry ingredients into the wet ingredients until smooth.
- Carefully fill the muffin tray with batter until 3/4 full.
- Bake for about 15 minutes or until golden brown and a toothpick comes out clean.
- Mix the coconut sugar and remaining cinnamon in a bowl for the glaze.
- Dip each donut hole into the cinnamon-sugar mixture once cooled.
Notes
Ensure all perishables are at room temperature before mixing. Don’t overmix to keep the donut holes light and fluffy.
