Ingredients

- 1 cup unsweetened shredded coconut (96g)
- 1/2 cup pitted Medjool dates (about 10 dates)
- A pinch of salt
- 1/2 cup dark chocolate chips
Instructions
- Make the filling: In a food processor, combine the shredded coconut, pitted Medjool dates, and pinch of salt. Pulse until the mixture looks crumbly.
- Blend together: Keep blending, stopping occasionally to scrape down the sides of the bowl. You’ll know it’s done when the mixture is sticky and can hold its shape when pressed together—about 2-3 minutes of blending.
- Form the balls: Using your hands, take approximately 1 tablespoon of the mixture and roll it into a ball. Place them on a lined baking sheet and freeze for at least 30 minutes.
- Make the coating: Place the dark chocolate chips in a microwave-safe dish and microwave on high in 20-30 second intervals, stirring in between until melted and smooth.
- Dip and set: Retrieve the frozen energy balls, and one by one, dip them into the melted chocolate. Shake off any excess and arrange them back on the lined sheet.
- Drizzle extra chocolate (optional): If desired, drizzle any remaining chocolate over the balls and sprinkle with extra flaked coconut.
- Store appropriately: Once the chocolate sets, store your Coconut Date Energy Balls in an airtight container in the refrigerator or freezer.
