- 1 can coconut milk (preferably full-fat)
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp lime juice (fresh)
- 2 cloves garlic (minced)
- 1 tsp ginger (grated)
- 2 cups cooked rice (jasmine or basmati)
- 1 tbsp vegetable oil (or coconut oil)
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish
Instructions
- Cook the Rice: Cook the rice according to package instructions and set aside.
- Sauté Aromatics: Heat the vegetable oil in a skillet, add garlic and ginger, and sauté until fragrant.
- Cook the Chicken: Add seasoned chicken to the skillet, cooking for 6-8 minutes on each side until golden.
- Make the Sauce: Pour in coconut milk and soy sauce, stir, and simmer for 5-7 minutes.
