- 1/4 cup brown sugar (for glaze)
- 2 pounds of ground beef
- 1 cup breadcrumbs
- 1 onion, finely chopped
- 2 eggs, lightly beaten
- 1/2 cup milk
- 1 tablespoon Worcestershire sauce
- Salt and pepper to taste
- 1/2 cup ketchup (for glaze)
- 1 tablespoon mustard (for glaze)
- 1/4 cup brown sugar (for glaze)
Instructions
- Prep: Preheat oven to 350°F (175°C). Line baking sheet with foil or use loaf pan.
- Mix: In large bowl, combine all meatloaf ingredients. Mix gently with hands until just combined (don’t overwork).
- Shape: Form into 9×5-inch loaf on baking sheet (or press into loaf pan).
- Glaze: Whisk glaze ingredients; spread 1/2 over loaf.
- Bake: 45 mins. Spread remaining glaze; bake 15-20 mins more until 160°F (71°C) internal temp.
- Rest: Let stand 10 mins before slicing.
Notes
- Moisture hack: Soak breadcrumbs in milk 5 mins before mixing.
- Freezer-friendly: Wrap unbaked loaf tightly; freeze up to 3 months (add 15-20 mins baking time).
- Variations: Add 1/2 cup grated Parmesan or swap 1 lb beef for ground pork.
- For cleaner slices, use serrated knife and wipe between cuts.
