- 12 ounces spaghetti
- 8 ounces bacon (diced)
- 3 large eggs
- 1 cup grated Parmesan cheese
- 1/2 cup grated Pecorino Romano cheese (optional)
- 3 cloves garlic (minced)
- 1 teaspoon freshly ground black pepper
- Salt (to taste)
- 2 tablespoons fresh parsley (chopped, optional, for garnish)
Instructions
- Bring a large pot of salted water to a rolling boil, then cook 12 ounces of spaghetti according to package instructions until al dente, about 8-10 minutes.
- Reserve 1 cup of pasta cooking water, then drain the spaghetti and set it aside.
- In a large skillet over medium heat, cook 8 ounces of diced bacon until crispy, approximately 5-7 minutes.
- Remove bacon and leave the fat in the skillet.
- In a bowl, whisk together 3 large eggs and 1 cup of Parmesan cheese, and season with pepper.
- Add the drained spaghetti to the skillet, tossing to coat in the bacon fat.
- Add the bacon and minced garlic, cooking for another 1-2 minutes.
- Remove the skillet from heat, and pour the egg mixture over the hot pasta, stirring quickly until creamy.
- Adjust seasoning with salt and pepper, and garnish with parsley.
- Serve immediately with extra cheese and black pepper on top.
