Ingredients
- Beef slices (sirloin or flank steak)
- Thick-cut bacon
- Dill pickles
- Dijon mustard
- Sweet onion
- Carrot (julienned)
- Low-sodium beef broth
- Salt and pepper
- Neutral oil (canola or avocado)
Instructions
- Pound the beef slices to about 1/4 inch thick using a meat mallet.
- Spread Dijon mustard generously over each slice.
- Layer bacon, pickles, onion, and carrot evenly on the beef.
- Roll the slices tightly and secure with toothpicks or kitchen twine.
- In a large pot, heat oil over medium-high heat and brown the roulades on all sides for about 5-7 minutes.
- Add beef broth, cover, and simmer for 1.5 to 2 hours until fork-tender.
- Remove roulades, let rest for a few minutes, then slice and serve with gravy made from pot juices.
