Description

Ingredients

  • Beef slices (sirloin or flank steak)
  • Thick-cut bacon
  • Dill pickles
  • Dijon mustard
  • Sweet onion
  • Carrot (julienned)
  • Low-sodium beef broth
  • Salt and pepper
  • Neutral oil (canola or avocado)

Instructions

  1. Pound the beef slices to about 1/4 inch thick using a meat mallet.
  2. Spread Dijon mustard generously over each slice.
  3. Layer bacon, pickles, onion, and carrot evenly on the beef.
  4. Roll the slices tightly and secure with toothpicks or kitchen twine.
  5. In a large pot, heat oil over medium-high heat and brown the roulades on all sides for about 5-7 minutes.
  6. Add beef broth, cover, and simmer for 1.5 to 2 hours until fork-tender.
  7. Remove roulades, let rest for a few minutes, then slice and serve with gravy made from pot juices.
