Description

Ingredients

  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup milk
  • 2 large eggs
  • 2 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a muffin tin.
  2. In a bowl, combine flour, sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
  4. Pour wet ingredients into dry ingredients, stirring gently.
  5. Fill muffin cups 3/4 full with batter.
  6. Mix remaining sugar and cinnamon, then sprinkle over muffin batter.
  7. Bake for 15-18 minutes until golden brown and a toothpick comes out clean.
  8. Allow to cool slightly before serving warm.

Notes

For a lighter muffin, do not overmix the batter. Store in an airtight container for up to 2 days at room temperature, or freeze for 3 months.
