- 2 large eggs
- 2 tablespoons butter, melted

- 1/4 cup sugar (for topping)

Instructions
- Preheat oven to 375°F (190°C) and grease a muffin tin.
- In a bowl, combine flour, sugar, baking powder, salt, and cinnamon.
- In another bowl, whisk together milk, eggs, melted butter, and vanilla extract.
- Pour wet ingredients into dry ingredients, stirring gently.
- Fill muffin cups 3/4 full with batter.
- Mix remaining sugar and cinnamon, then sprinkle over muffin batter.
- Bake for 15-18 minutes until golden brown and a toothpick comes out clean.
- Allow to cool slightly before serving warm.
Notes
For a lighter muffin, do not overmix the batter. Store in an airtight container for up to 2 days at room temperature, or freeze for 3 months.
