Description

A delightful blend of moist muffins topped with a crunchy cinnamon streusel, perfect for breakfast or snacks.


Ingredients

  • 2 cups all-purpose flour, sifted
  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup brown sugar
  • 1/2 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin cups.
  2. Combine the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
  3. Mix the melted butter, milk, eggs, and vanilla in another bowl.
  4. Combine the wet mixture into the dry ingredients, stirring gently until just mixed.
  5. Prepare the streusel by mixing brown sugar, chopped nuts, and more cinnamon in a small bowl.
  6. Fill each muffin cup halfway, add a spoonful of streusel, then top with more batter and streusel.
  7. Bake for 18-22 minutes until a toothpick inserted comes out clean.
  8. Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

Notes

These muffins can be stored at room temperature for 2-3 days or frozen for up to three months.
