- 2 cups all-purpose flour, sifted
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter, melted
- 1 cup milk
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup brown sugar
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin cups.
- Combine the flour, granulated sugar, baking powder, salt, and ground cinnamon in a large bowl.
- Mix the melted butter, milk, eggs, and vanilla in another bowl.
- Combine the wet mixture into the dry ingredients, stirring gently until just mixed.
- Prepare the streusel by mixing brown sugar, chopped nuts, and more cinnamon in a small bowl.
- Fill each muffin cup halfway, add a spoonful of streusel, then top with more batter and streusel.
- Bake for 18-22 minutes until a toothpick inserted comes out clean.
- Cool the muffins in the tin for 5 minutes before transferring to a wire rack.

These muffins can be stored at room temperature for 2-3 days or frozen for up to three months.
