Description

Ingredients

  • ¼ cup chopped fresh cilantro leaves
  • 3 tablespoons extra virgin olive oil, divided
  • 2 tablespoons freshly squeezed lime juice
  • 1 tablespoon lime zest
  • 2 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 pounds boneless, skinless chicken thighs

Instructions

  1. In a medium bowl, whisk together cilantro, 2 tablespoons of olive oil, lime juice, lime zest, chili powder, cumin, salt, and pepper until well combined.
  2. Place chicken thighs in a large Ziploc bag or bowl. Pour in the marinade, seal the bag, and mix until the chicken is well coated. Marinate for at least 2 hours—or overnight in the refrigerator.
  3. When ready to cook, drain the chicken from the marinade.
  4. In a skillet, heat the remaining tablespoon of olive oil over medium-high heat.
  5. Add the chicken thighs in a single layer. Cook for about 4-5 minutes per side, or until golden brown and the internal temperature reaches 165°F.
  6. Serve immediately, garnished with extra cilantro and lime wedges.

Notes

For optimal flavor, ensure your chicken is at room temperature before marinating. Can be stored in an airtight container in the refrigerator for up to 4 days.
