- ¼ cup chopped fresh cilantro leaves
- 3 tablespoons extra virgin olive oil, divided
- 2 tablespoons freshly squeezed lime juice
- 1 tablespoon lime zest
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 2 pounds boneless, skinless chicken thighs
Instructions
- In a medium bowl, whisk together cilantro, 2 tablespoons of olive oil, lime juice, lime zest, chili powder, cumin, salt, and pepper until well combined.
- Place chicken thighs in a large Ziploc bag or bowl. Pour in the marinade, seal the bag, and mix until the chicken is well coated. Marinate for at least 2 hours—or overnight in the refrigerator.
- When ready to cook, drain the chicken from the marinade.
- In a skillet, heat the remaining tablespoon of olive oil over medium-high heat.
- Add the chicken thighs in a single layer. Cook for about 4-5 minutes per side, or until golden brown and the internal temperature reaches 165°F.
- Serve immediately, garnished with extra cilantro and lime wedges.
