Description

Delightful and whimsical cupcakes mimicking the shape of a Christmas tree, perfect for holiday celebrations.


Ingredients

  • ½ cup vegetable oil
  • ¾ cup sour cream
  • ¾ cup heavy cream (cold)
  • 4 large eggs (room temperature)
  • 1 box chocolate cake mix
  • ¼ cup cocoa powder (unsweetened)
  • 1 tsp espresso powder (optional)
  • 2 cups unsalted butter (cold, cut into chunks)
  • 10 cups powdered sugar
  • 2 tbsp vanilla extract
  • ½ cup plus 2 tbsp heavy cream (cold)
  • A pinch of salt
  • Green gel food coloring
  • Golden star sprinkles
  • Holiday sprinkles

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tin with liners.
  2. In a large bowl, whisk together the cake mix, cocoa powder, and espresso powder.
  3. In another bowl, combine vegetable oil, sour cream, cold heavy cream, and eggs until smooth.
  4. Pour wet ingredients into dry ingredients, mixing until just combined.
  5. Divide the batter among the cupcake liners, filling each about 2/3 full.
  6. Bake for 18-22 minutes or until a toothpick inserted comes out clean. Cool for 5 minutes in the pan, then transfer to a wire rack to cool completely.
  7. For the frosting, beat cold butter on medium speed until creamy. Gradually mix in powdered sugar, then increase to medium speed until fluffy.
  8. Add vanilla extract, salt, and cold heavy cream, beating until light and fluffy, then mix in green gel food coloring to reach desired hue.
  9. Fit a piping bag with a 1 M piping tip and fill with frosting. Pipe frosting on cooled cupcakes to create a tree shape.
  10. Decorate with golden star sprinkles and holiday sprinkles.

Using high-quality cocoa and vanilla can elevate the flavor. Store decorated cupcakes in an airtight container for up to 2-3 days.
