Ingredients

  • 1/2 cup granulated sugar
  • 2 tbsp brown sugar
  • 1 large egg, at room temperature
  • 1/4 tsp almond extract
  • 2 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 & 1/4 cup all-purpose flour
  • 1 tbsp cornstarch
  • 1/4 tsp salt
  • 4 tbsp butter, softened (for frosting)
  • 1 tsp vanilla extract (for frosting)
  • 3 tbsp heavy cream (for frosting)
  • 1 cup powdered sugar (for frosting)
  • Christmas sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
  3. Add the egg, almond extract, and vanilla extract, and beat until well incorporated.
  4. In a separate bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Spread the batter into a greased 9×9 inch baking pan and smooth it out evenly. Bake for 20-25 minutes, or until the edges are golden and a toothpick comes out clean.
  6. Let the bars cool completely in the pan before frosting them.
  7. For the frosting, beat together softened butter, vanilla extract, and heavy cream. Gradually mix in powdered sugar until smooth.
  8. Once cooled, spread the frosting on top of the cookie layer and decorate with Christmas sprinkles.
