- 1/2 cup butter, at room temperature
- 1/2 cup granulated sugar
- 2 tbsp brown sugar
- 1 large egg, at room temperature
- 1/4 tsp almond extract
- 2 tsp vanilla extract
- 1/2 tsp baking powder
- 1 & 1/4 cup all-purpose flour
- 1 tbsp cornstarch
- 1/4 tsp salt
- 4 tbsp butter, softened (for frosting)
- 1 tsp vanilla extract (for frosting)
- 3 tbsp heavy cream (for frosting)
- 1 cup powdered sugar (for frosting)
- Christmas sprinkles (for decoration)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy, about 3-5 minutes.
- Add the egg, almond extract, and vanilla extract, and beat until well incorporated.
- In a separate bowl, whisk together flour, cornstarch, baking powder, and salt. Gradually mix the dry ingredients into the wet mixture until just combined.
- Spread the batter into a greased 9×9 inch baking pan and smooth it out evenly. Bake for 20-25 minutes, or until the edges are golden and a toothpick comes out clean.
- Let the bars cool completely in the pan before frosting them.
- For the frosting, beat together softened butter, vanilla extract, and heavy cream. Gradually mix in powdered sugar until smooth.
- Once cooled, spread the frosting on top of the cookie layer and decorate with Christmas sprinkles.
Notes
Opt for organic sugar and high-quality butter for better flavor. For a gluten-free version, use a 1:1 baking flour mix.
