A festive dessert combining layers of fluffy pavlova, sumptuous cream, and vibrant fruits, perfect for holiday gatherings.

- 2 cups thickened cream (whipped to soft peaks)
- 1.5 cups full cream milk
- 5 large extra-large egg yolks
- 0.5 cups caster sugar
- 2 tbsp cornflour
- 30 g unsalted butter (cubed and softened)
- 1 tsp vanilla bean paste or pure vanilla extract
- 250 g cherries (halved and pitted)
- 1 white and yellow peach (pitted and cut into wedges)
- 1 white and yellow nectarine (pitted and sliced)
- 0.25 cups lemon juice (freshly squeezed)
- 0.25 cups caster sugar (for fruits)
- 250 g raspberries
- 100 g Coles Vanilla Meringue Kisses
- 100 g Coles Flavoured Meringue Kisses
Instructions
- Preheat your oven to 120°C (250°F).
- In a bowl, whip egg whites until tight peaks form. Gradually add in 0.5 cups of caster sugar.
- Fold in cornflour and vinegar, mix well. Bake meringue for about 1 hour; leave inside to cool.
- In a saucepan, whisk together full cream milk and egg yolks with remaining caster sugar until thickened.
- Combine cherries, peaches, nectarines, and raspberries in a bowl, toss with lemon juice and 0.25 cups sugar, and let sit.
- Whip the thickened cream until soft peaks form.
- Layer meringue kisses, fruit mixture, custard, and whipped cream in a trifle bowl. Repeat layers and top with whipped cream.
- Chill in the refrigerator for at least an hour before serving.
Notes
For the best results, make meringue a day in advance and allow flavors to meld before serving.
