Description

A festive dessert combining layers of fluffy pavlova, sumptuous cream, and vibrant fruits, perfect for holiday gatherings.


Ingredients

  • 2 cups thickened cream (whipped to soft peaks)
  • 1.5 cups full cream milk
  • 5 large extra-large egg yolks
  • 0.5 cups caster sugar
  • 2 tbsp cornflour
  • 30 g unsalted butter (cubed and softened)
  • 1 tsp vanilla bean paste or pure vanilla extract
  • 250 g cherries (halved and pitted)
  • 1 white and yellow peach (pitted and cut into wedges)
  • 1 white and yellow nectarine (pitted and sliced)
  • 0.25 cups lemon juice (freshly squeezed)
  • 0.25 cups caster sugar (for fruits)
  • 250 g raspberries
  • 100 g Coles Vanilla Meringue Kisses
  • 100 g Coles Flavoured Meringue Kisses

Instructions

  1. Preheat your oven to 120°C (250°F).
  2. In a bowl, whip egg whites until tight peaks form. Gradually add in 0.5 cups of caster sugar.
  3. Fold in cornflour and vinegar, mix well. Bake meringue for about 1 hour; leave inside to cool.
  4. In a saucepan, whisk together full cream milk and egg yolks with remaining caster sugar until thickened.
  5. Combine cherries, peaches, nectarines, and raspberries in a bowl, toss with lemon juice and 0.25 cups sugar, and let sit.
  6. Whip the thickened cream until soft peaks form.
  7. Layer meringue kisses, fruit mixture, custard, and whipped cream in a trifle bowl. Repeat layers and top with whipped cream.
  8. Chill in the refrigerator for at least an hour before serving.

Notes

For the best results, make meringue a day in advance and allow flavors to meld before serving.
