Description

A comforting and versatile Christmas Breakfast Casserole that combines eggs, bread or hash browns, savory meats, and gooey cheese, perfect for festive gatherings.


Ingredients

  • 810 large eggs
  • 2 cups grated cheese (cheddar, mozzarella, or a blend)
  • 1 pound cooked sausage or diced ham
  • 56 cups cubes of crusty bread or 2 bags of frozen hash browns
  • 12 cups diced bell peppers, onions, or spinach (optional)
  • Salt and pepper to taste
  • Optional herbs like parsley or thyme

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Generously grease a 9×13-inch baking dish or two 8×8-inch dishes.
  3. In a large bowl, whisk together the eggs and season with salt and pepper.
  4. Spread bread cubes or hash browns evenly in the greased dish.
  5. Layer with cooked sausage or diced ham, followed by cheese.
  6. Pour the egg mixture over the layers evenly.
  7. If using, sprinkle vegetables on top.
  8. Cover and refrigerate for at least 2 hours or overnight.
  9. Bake for 45-55 minutes or until golden brown and the eggs are set.
