- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder

- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup strong brewed coffee, cooled
- 1/4 cup milk
- 8 ounces mascarpone cheese, chilled
- 1/2 cup heavy cream, chilled
- 1/4 cup powdered sugar
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon vanilla extract
- 1 tablespoon coffee liqueur (optional)
- 1 teaspoon cocoa powder for dusting
Instructions
- Preheat your oven to 350°F (175°C) and line a 12-cup muffin tin with paper liners.
- Whisk together the flour, cocoa powder, baking powder, baking soda, and salt until well combined.
- Cream the softened butter and granulated sugar together until light and fluffy, about 3 minutes.
- Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
- Combine the cooled coffee and milk.
- Alternately add the dry ingredients and coffee-milk mixture to the butter mixture, beginning and ending with dry ingredients. Mix until just combined.
- Divide the batter evenly among the muffin liners, filling each about two-thirds full.
- Bake for 18–20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
- Beat the mascarpone cheese, heavy cream, powdered sugar, cocoa powder, vanilla extract, and coffee liqueur in a mixing bowl until stiff peaks form.
- Pipe or spread the mascarpone frosting generously on top. Dust with cocoa powder for a finishing touch!
