- 1 cup heavy cream
- 16 oz mascarpone cheese

Instructions
- Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- Cream together the butter and sugar until light and fluffy (about 4-5 minutes).
- Beat in the eggs one at a time, adding vanilla extract.
- In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- Gradually add the dry mixture to the wet ingredients, alternating with the milk until just combined.
- Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick comes out clean.
- Let the cakes cool for 10 minutes, then transfer to a wire rack to cool completely.
- Whip the heavy cream in a bowl until stiff peaks form, then fold in the mascarpone, powdered sugar, and vanilla until combined.
- Soak the first cake layer with half of the espresso mixture, spread half of the chocolate cream on top, then add the second cake layer and repeat.
- Finish with a dusting of cocoa powder.
Notes
Storage: Store in the fridge for up to 5 days, or freeze individual slices for up to a month. For a chocolate ganache glaze, consider adding it for an extra chocolate touch.
