Ingredients

  • 4 large eggs, separated
  • 50g granulated sugar
  • 30g unsalted butter, plus extra for greasing
  • 1 tablespoon all-purpose flour
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease 4 ramekins with butter and dust with sugar.
  2. Melt chocolate and butter together in double boiler until smooth. Let cool slightly.
  3. Whisk egg yolks with flour, vanilla, and salt until combined. Fold into chocolate mixture.
  4. In separate bowl, beat egg whites until soft peaks form. Gradually add sugar and beat until stiff peaks form.
  5. Gently fold 1/3 of egg whites into chocolate mixture to lighten, then fold in remaining whites.
  6. Divide mixture among prepared ramekins, filling 3/4 full.
  7. Bake 12-15 minutes until puffed and slightly wobbly in center.
  8. Dust with powdered sugar and serve immediately.
