- 4 large eggs, separated
- 50g granulated sugar
- 30g unsalted butter, plus extra for greasing
- 1 tablespoon all-purpose flour
- 1 teaspoon vanilla extract
- Pinch of salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease 4 ramekins with butter and dust with sugar.
- Melt chocolate and butter together in double boiler until smooth. Let cool slightly.
- Whisk egg yolks with flour, vanilla, and salt until combined. Fold into chocolate mixture.
- In separate bowl, beat egg whites until soft peaks form. Gradually add sugar and beat until stiff peaks form.
- Gently fold 1/3 of egg whites into chocolate mixture to lighten, then fold in remaining whites.
- Divide mixture among prepared ramekins, filling 3/4 full.
- Bake 12-15 minutes until puffed and slightly wobbly in center.
- Dust with powdered sugar and serve immediately.

- Do not overmix when folding in egg whites to maintain airiness.
